OliveNation Brown lentils, also known at Spanish Pardina are a small, with a brown exterior and yellow on the inside. They have a distinctive nutty flavor and hold their shaper when cooked. Like other lentils, they are low in calories and fat, but high in fiber and protein.
Spanish Pardina lentils are commonly used in Spanish and Mediterranean cuisines. They can be mixed with finely chopped onions, tart green apples and kale, with a vinaigrette dressing to make a healthy salad. Brown lentils cook quickly so they are excellent for making hearty winter soups and pasta dishes.
How to Prepare Spanish Pardina Lentils: Brown lentils do not need to be pre-soaked. Place 1 cups of lentils in a pot with 3 cups of water. Bring to a boil. Add seasons according to your recipe and simmer for 10 minutes or until tender.
