Fermented black garlic, often called Korean black garlic, is made by fermenting whole heads at low temperatures over long periods of time. This fermentation process causes the bulbs to become blackened and the flavor to become more mellow and sweeter. Our Korean fermented black garlic is then dried to provide a longer shelf life as well as ease of use. These cloves can be used in any recipe that calls for fresh garlic and will provide a richer, more mellow, sweeter taste. Dried black garlic adds umami to any dish, such as using as a spread on crostini or bruschetta, in savory dishes using poultry, steak, fish, or game, and even in desserts!
