Cover the beans in a pot of cool water and soak overnight (or at least 8 hours). Rinse the beans and fill a pot with fresh water. Add seasonings if desired and bring to a boil. Cover and reduce heat to a simmer. Cook the beans for 45 minutes to an hour, until tender.
