Along the salt road between Trapani and Marsala, for many years a Protective Nature Reserve, SoSalt keeps to the ancient method of manual and hand-harvesting of sea salt, following techniques and procedures handed down by the Phoenicians. The result is a very high quality natural and organic sea salt that is rich in minerals, extremely soluble and has exceptionally good taste.

Riserva Naturale - The traditional Sicilian sea salt makers "cultivate" the sea, bringing out these special sized grains that are ideal for cooking. The presence of Magnesium makes it extremely soluble.

Soffe Di Sale (Whiffs of Salt) are the thin layers of sea salt that form on the surface of the salt pans during those rare days when there is no wind. Strictly harvested by hand, this sea salt is particularly light, white in color and naturally fine. Always the choice for connoisseurs, its exceptional quality brings out the flavors in cold dishes.

Crystalli di Salina are coarse, un-ground salt crystals that are harvested and selected by hand. They are the cream of the sea salt harvest. These salt crystals should be ground just before they are consumed to experience the full richness of flavors.

About Trapani Sea Salt

Trapani salt is produced using sun, sea water, wind and organic planktons. The most ancient reference, from 1154 B.C., describe Trapani as surrounded by the sea and the salt works. This coastal shelf on the West side of Sicily has been producing sea salt from the time of the Phoenicians.

The Trapani Sea Salt is 98% sodium choloride, however, it also has Calcium, Magnessium, Potassium, Floride and Iodine present. This richness in minerals help enhance the flavor and tastiness of foods.

Oven Roasted Sweet Potato Fries

Oven Roasted Sweet Potato Fries

Serves 4-6 as a side
Prep: 10 min. Cook: 20 min.

Ingredients:
4 tbsp olive oil
Coarse Sea salt and coarsely ground black pepper (for sprinkling at the end)
1 1/2 pounds sweet potatoes, scrubbed and cut into fries (unpeeled)

Preheat oven to 450 degrees F. In a small bowl, whisk together the oil and salt and pepper, to taste. Arrange the potato slices in rows on an oiled baking sheet. Brush the potatoes with the oil mixture, and roast them in the oven, turning them once, for about 20 min. or until golden and crispy. Transfer the potatoes to paper towels to drain, Sprinkle them with the coarse salt and pepper and serve them right away.

Some chefs recommend using an equal portion of olive oil and butter (2 tbsp ea.).
