Tuscan Nectar Rub for Poultry and Seafood

Bring the flavor of Tuscany to your dining room table with this fantastic rub for poultry. Tuscany is known throughout the culinary world for its fine wines, outstanding extra-virgin olive oils, Chianina beef as well as an abundance of herbs and citrus trees. This spice blend is influenced by the region and its long history. The rub produces hearty flavors with a hint of heat from the aleppo peppers. It is well balanced with a refreshing punch from the lemon zest.

Ingredients: basil, oregano, aleppo and ancho pepper, fennel seeds, lemon zest, lemon juice, sesame seeds, cumin.

AS A RUB: Lightly dust on chicken or seafood before pan frying, roasting or barbecuing.

Remember: this rub is salt-free, gluten-free, msg-free and preservative-free.

Rotisserie Grilled chicken

Serves 4
Prep time 10 min. cook time 60 min.

Ingredients for:
1 whole chicken
8 oz. chicken rub (Tuscan Nectar or Black sea Escape)
salt and pepper to taste

Combine ingredients above and rub under entire skin of chicken by making slits in the skin every couple of inches. Marinate chicken for at least 1 hr to overnight in the refridgerator.

Put on the rotisserie and grill for 45 min. to 1 hour depending on the type of grill and heat source.

Optional:
Carve up the chicken and chop into small strips. Serve on warmed pita bread with a layer of hummus, tomato, parsley and a squeeze of lime.
