Did you know that flaxseeds are rated as one of the 15 super foods for excellent health? The tiny-nutty flavored seeds from the flax plant are a great source of omega-3 fatty acids and lignans which are reputed to block hormone related cancers. Flaxseeds are filled with protein and fiber. One third of this fiber is cholesterol-lowering soluble fiber. Use flaxseeds every day. Sprinkle one to two tablespoons of ground flaxseeds into your yogurt, cereals, salads, soups and muffin batter.

Flax Seed Muffins

makes 12 Muffins

Ingredients:
1 1/2 cups all-purpose flour
1 1/2 cups ground flax seed
3/4 cup brown sugar
1 tbsp baking powder
3/4 tsp nutmeg
1 1/2 tsp cinnamon
2 cups milk
1 egg

Preheat oven to 350°F.

Lightly grease a muffin pan with shortening or vegetable oil, or use paper muffin cups. Place all ingredients into a mixing bowl. Stir until well mixed. Mix all ingredients, stir until well mixed. Fill muffin cups or greased cups about ¾.

Bake for approximately 25-30 minutes or until a cake tester comes out clean.
