Salts born of just the Sun and the Sea

Italian sea salt harvesting techniques go back 2000 years with earliest recorded history by the Phoenicians. In both Cervia (near Venice) and Trapani (in Sicily), the sea salt is still hand-harvested, and the natural minerals (iodine, calcium, magnesium and potassium) from the sea water is preserved. The sea salt harvesting season in Italy is between June and September.

Cervia’s Sea Salt is known for its absence of bitter minerals so it’s naturally sweeter than other sea salts. It’s even the trusted choice of many Emilia Romagna specialty producers for salting their parmigiano reggiano and prosciutto di Parma. It has also traditionally been known as the "Popes Salt" for obvious reasons.

Trapani Sea Salts

Eastern Sicily’s warm, dry climate and ever-present sea breezes enable Trapani’s sea salt artisans to carry on the traditions of the ancient Phoenicians and offer today’s discriminating cooks an expanded line of salts including hand-harvested, iodine added, seasonings and herbs, and the delicate, in limited quantity, pure salt crusts that form on the top of these salt harvests.

Pairings

Pair Cervia Sea Salt with cheese and prepared meats. Add it to your marinades and use it for cooking. Smother a pork shoulder with Cervia salt, add a few springs of rosemary and slow roast for a few hours. Simply delicious!
