Our Sun Ripened Tomatoes Are Always In Season

Our dried tomatoes, convenient for so many uses, were originally plump, red, vine-ripened fresh tomatoes. Domestically grown and harvested in Virginia’s Shenandoah valley the tomatoes are always picked at the peak of freshness and then carefully washed and dried using modern methods that concentrate and preserve their natural sweetness and essence. A small amount will bring a gourmet touch and a burst of flavor to a wide variety of recipes—all year long. Used sparingly a little goes a long way!.


Sulfite-Free, Lycopene-Rich Goodness

Lycopene, a powerful antioxidant, is abundant in all tomatoes, including dried tomatoes. Studies have shown lycopene’s benefits include lowering certain cancer risks and contributing to good heart health. For those allergic to sulfites, there is even more good news: Our dried tomatoes do NOT contain sulfites - an allergy-related preservative widely used in food, for color retention, as well as in wine..


Your Choice: Plain or In Oil

The decision of which to choose is entirely up to you. We keep both in our Italian pantry. Eaten right out of the bag dried tomatoes provides a healthy snack. (Kids love them, too!) The dried tomatoes packed in oil with herbs requires no reconstituting. Plain dried ones should be reconstituted in extra virgin olive oil, beef or chicken stock, wine or water for our recipes. Many food mavens we know prefer to buy their dried tomatoes in oil because they love to use that divine tomato-infused liquid for sautéing, drizzling over salads, even for adding extra moisture to homemade meatloaf ..


The Birth of Sun-Dried Tomatoes

It’s hard to imagine a day passing in any Italian home without at least one tomato-enhanced dish being served. What would bruschetta, frittata, pasta sauce, pizza, etc. be without the addition of tomatoes? To live without tomatoes all winter would be unthinkable. In order to insure that delicious tomatoes would be available all year long, home cooks and chefs employed a simple, natural solution which was to lay the summer’s bounty out to dry on hot roof tiles. These tomatoes would satisfy their tomato cravings during their garden’s cold winter sleep. The combination of the warm Italian summer sun plus the fresh, juicy pomodori, provide the perfect conditions to turn the tomatoes into “pomodori secchi,”- sun-dried tomatoes. The tradition continues to this very day.
