Azienda Agricola Marmo Maria” is young - established in 1999 on about 100 hectares of olive groves, property of family, in Cocevola Contrada near “ Castel del Monte” ( Federico II’ s manor ). However, using ancient techniques of cultivation earned this extra virgin olive oil the coveted DOP Terra di Bari designation. In keeping with tradition, they exclusively use just the “Coratina” olives to produce the oil.

The olives are usualy hand-harvested in Nov/Dec of each year when they are ripe but still green. The traditional technique of hand-harveting ensures that the olive is not damaged in any way and no juice is lost until its ready to be turned into olive oil. Thats done by cold pressing in granite crushers with slow rotations of the millstones - guaranteeing perfect unity with ancient olive oil making techniques.

The result is an olive oil with green colour with yellow reflections, a persistent and harmonic taste and richness of health properties that prevent many diseases ( presence of phenol, phospholipids and liposoluble vitamins) and very low acidity.
