Because Balsamic Vinegars range from very acidic (younger balsamic vinegars) to very sweet (older, "Traditional" balsamic vinegars), we keep three varieties in our kitchen: younger balsamic for everyday salads and reduction sauces, a 12-year balsamic to sweeten cheeses and desserts and, finally, a Tradizionale gold or silver balsamic vinegar for pure indulgence.
