About the House of De Carlo
The DeCarlo family has worked the land of Bitritto, in the Apulia region of Italy, since the 16th century. While they still harvest using the age-old method of brucatura (hand-selecting only the best fruit and grinding within 24 hours), innovation and modernization ensures the consistent quality of their extra-virgin oils.

Apulia’s economy has always depended strongly on the cultivation of olives and since ancient times, the DeCarlo family has been market leaders in the region’s olive production. Today, with 7,000 trees on 50 hectares (124 acres), the production of oil is conceived and lived as an art, to which one dedicates patience, experience and love that begins with taking care of the olive trees and their fruit.
A combination of that art, age-old traditional methods and three phases of modernization have helped the DeCarlo family maintain strict quality control and keep the quality of their oils unaltered, safeguarded and guaranteed.
