The process is as simple as the product. Sea water flows into shallow pans beside the blue Adriatic. The sun warms the captive water and the breezes bring gentle ripples, coaxing the water to evaporate. Men rake the extracted salt into mountains of white, after which it is spread out again to be fully dried by the sun and the wind only—never by artificial means. Only a limited quantity of this epicurean treasure is produced each year and, unlike other sea salt producers who harvest once at the end of the summer season, the artisans of Sea Salt of Cervia harvest twice per week and only in the months of June through September. Nothing is changed or modified. There are no additives. It is a pure product that comes from the sea to the Cervia producers to OliveNation to you.
