“A hazel-brown to dark-brown foam—characterized by tawny reflexes—with a very fine texture. An intense scent with notes of flowers, fruits, toasted bread and chocolate. All of these sensations are felt also after swallowing the coffee in the long-lasting aroma. Its taste is round, substantial and velvet-like. Sour and bitter tastes are well balanced. There is no, or just a barely perceptible astringent taste.”

Ambrogio Cagliari, his passion for coffee ignited by many years spent in Brazil, opened his first shop in Modena in 1909. In the nearly 100 years since, the Cagliari family has passed down this passion, know-how and deep-seated respect for coffee from generation to generation.

The prized green coffee beans of Caffe Cagliari are carefully selected and brought to Modena for roasting from the world’s best plantations. Each variety has its own unique cooking and cooling requirements. Using the traditional “separate roasting” method, each is roasted separately to guarantee the standards of color, flavor and aroma of every bean. Only after they are air-cooled, each in their own storeroom, are the different varieties rapidly blended together following time-honored recipes to ensure the same blends every time.

In 2000, Caffè Cagliari was granted the conformity certification in line with the EEC Regulations 2092/91 regarding the import, processing and sale of materials in accordance with the methods of organic farming.
