1 whole chicken 8 oz. Tuscan Nectar Chicken Rub 1 teaspoon Sale di Cervia Sea Salt 1/2 teaspoon freshly ground Tellicherry Peppercorns
Combine ingredients and rub under entire skin of chicken by making slits in the skin every couple of inches. Marinate chicken for at least 1 hr to overnight in the refrigerator.
Put on the rotisserie and grill for 45 min. to 1 hour depending on the type of grill and heat source.
If you have any leftovers, chop into small strips. Serve on warmed pita bread with a layer of hummus, tomato, parsley and a squeeze of lime.
