Ingredients 4 Large Potatoes 6-8 tblsp DeCarlo Il Classico Novello Extra Virgin Olive Oil 1-2 tblsp of mayonnaise 4 tblsp good quality capers Trapani Sea Salt, to taste Freshly ground Five Peppercorn Mix Chopped parsley for garnish (optional)
Boil the potatoes in their jackets and then set aside to cool. When cooled, peel and dice each one. Add capers. Whisk together dressing: DeCarlo Olive Oil, mayonaise, Trapani Sea Salt and Five Pepper Mix. Garnish with parsley and set aside for 1/2 hr or refrigerate for a few hours.
