Pesto Sauce

serves 4
Prep 15 min.

Ingredients:
2 cups of packed Fresh Basil (sweet italian)
Salt (coarse) to taste
1/4 cup Pine Nuts, toasted
1/4 cup Parmesan cheese, grated
1/4 cup Pecorino cheese, grated
3/4-1 cup of Extra Virgin Olive Oil
2 cloves of garlic

This recipe can be adjusted to individual tastes. Toast fresh pine nuts in a pan for a few minutes until light brown color. Blend all ingredients in a food processor except salt and olive oil. With the food processor on, slowly drizzle the olive oil into the mix until the oil is fully combined with the rest of the ingredients and to desired consistency. Pour into bowl and refrigerate.

This recipe can be used for 1 lb of pasta. For Pasta Genovese, dilute the pesto with 2 tablespoons of the hot pasta cooking water.
