Paradise Salmon Wraps

• 150 g Buche de Chevre cheese
• 1 tsp capers
• 1 spring onion
• 1 tsp Grains of Paradise
• 4 slices of Smoked Salmon
• 1 small seedless cucumber
• 6 cherry tomatoes
• Juice of 1/4 lemon
• 1 tsp DeCarlo Il Classico Novello Extra Virgin Olive Oil
• Dash of Trapani Sea Salt
• Fleur de Sel de Noirmoutier
• Freshly ground Green Peppercorns
• Chives

Wash the cucumber and cut it in halves, and then in quarters. Cut 1/4 of it in small cubes. Take the rest (3/4) and cut it in long sticks.
Mix together the Buche de Chevre cheese, the squeezed lemon juice, chopped spring onion and capers. Add the chopped tomatoes, cucumber cubes, Trapani Sea Salt, ground Green Pepper, and Grains of Paradise.
Take small plates and place a slice of Smoked Salmon flat on top.
In the first left corner, place a small amount of cream and 2 sticks of cucumber.
Fold, making sure to leave enough of the salmon slice to do 2 more layers.
Layer more cream and cucumber sticks.
Finish by folding the last edge of Smoked Salmon. Garnish with more cream, a cucumber stick and chives.
Sprinkle each wrap with Fleur de Sel and more Grains of Paradise.
Drizzle with DeCarlo Il Classico Novello Extra Virgin Olive Oil.
