Serves 6
Ingredients: 1 1/2 lb medium cooked prawns or jumbo shrimps 1/4 lb yellow teardrop tomatoes, halved 0.5 cup fresh basil leaves 1/8 lb baby arugula leaves 1 small red onion, sliced thinly 1 medium avocado
Dressing: 1/2 cup avocado oil 1/3 cup white wine vinegar 2 teaspoon Dijon mustard 1 close garlic, crushed Trapani Sea Salt and freshly ground Five Peppercorn Mix
Peel and devein prawns; halve lengthways.
DRESSING: Place all ingredients in a screw-top jar; shake well.
In a large serving bowl, combine prawns and remaining ingredients; Drizzle with Dressing.
