How to Cook Garbanzo Beans

For 1 pound of chick peas or garbanzo beans, cover with water and soak as long as possible overnight. Or, you can try boiling for a few minutes and then soak for a few hours. Or simply cover with water and start cooking.
Add to a medium to large pot as they will triple in size. Cover with water and bring to a boil over medium high heat. Skim any foam that forms on the surface and adjust heat to simmer. Cover partially to minimize evaporation. Stir every 15 minutes, adding water if necessary. Cook until tender, about 2 hours. Salt water and cook for a few more minutes.
Drain excess liquid (which is delicious-so save it!). Store in enough liquid to keep them moist Can be refrigerated for a few days or frozen for a few weeks.
