1 cup Petit Golden Lentils
6 cups Veggie-Glace Gold (Classic Roasted Vegetable Demi-Glace Stock)
4 carrots, chopped
1 onion, chopped
2 garlic cloves, minced
2 teaspoons Madras Curry Powder
cayenne, to taste (optional)
sour cream (optional)
Place all ingreidients in a large pot and bring to a boil.
Turn pot down to a simmer and simmer for 20-30 minutes, or until the Petit Golden Lentils are tender. Purée them with a hand mixer or a blender till smooth.
Serve with a dollop of sour cream and a sprinkle of cayenne, if desired.
