Makes 26 Oz (1 lb, 10 oz) loaf of bread
Prep and Baking Time: 1 1/2-2 1/2 hours
1 packet of gluten free yeast or 2 1/4 tsp
9 oz water
3 T. Oil of choice
1/2 tsp. apple cider vinegar
Mix dry ingredients together in bowl. Combine water, egg, oil and vinegar in microwave safe bowl and heat in microwave for 1 minute until warmed through. You do not want to cook the egg.
Pour wet ingredients into dry ingredients. Stir. Mix 5-10 minutes with hand mixer or stand mixer with paddle attachment (not dough hook) until smooth, stretchy and sticky-toothpaste like consistency. No kneading necessary.
Spray a medium size bread pan with gluten free cooking spray. Add dough and leave to rise in warm place until dough rises 1/2" above pan. You may use a warm (not hot) oven for this.
Bake in 350 degree oven or 335 convection oven for 30-35 minutes. Outside crust should look crunchy. Dump onto wire rack on its side. Cool 5 minutes on each side. Cool for a total of one hour.
