It was with good reason that Talleyrand referred to Brie as “The King of Cheeses”. To this day it remains as the most prized and celebrated of all French cheeses. It is believed that the origins of Brie go back to before the eighth century. Proof of that is in a report that Charlemagne enjoyed it at the Priory of Rueil in the town of Brie in the year 774. Brie is a soft cheese which is creamy in texture, smooth on the palate and runny.
