Summer Blackberry Topping

Cinnamon Apple Topping

Cinnamon and apple have long been known to pair well together and this Cinnamon Apple Topping is no exception.  A perfect accompaniment to top homemade vanilla bean ice cream or French toast, this topping can also be used to make numerous savory dips, tasty spiced salsa and special occasion desserts.  We've included a tasty recipe for you to try at home, but don't be afraid to experiment and create your own delightful treats!  And when your topping is gone, don't throw away the special handled jar!  Use it as a drinking cup or to store your own specialty mix of rubs!

Recipes:

Blueberry Bundt Cake with Blueberry Lemon Icing

1 ½  cups all-purpose flour, plus 1 teaspoon for blueberries and zest
2 teaspoons baking powder
½  teaspoon salt
1 cup (2 sticks) unsalted butter, room temperature
1 cup packed light-brown sugar
1 cup granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 cup sour cream
2 cups blueberries
2 tablespoons grated lemon zest
Nonstick cooking spray, for pan
1 Cup heavy whipping cream
1/2 cup Blackberry Patch Blueberry Lemon Topping plus a little for adding to batter

Preheat oven to 350 degrees. In a bowl, whisk 2 1/2 cups flour with baking powder and salt; set aside. In a mixing bowl, cream butter and sugars on high speed until light and fluffy. Add eggs, one at a time, beating until incorporated. Beat in vanilla. Reduce speed to low; add flour mixture in three additions, alternating with two additions of sour cream. Gradually stir in Blackberry Patch Blueberry Syrup, working in tablespoon size additions, to taste.  In a bowl, toss blueberries and zest with remaining teaspoon flour; gently fold into batter. Coat a 12-cup nonstick Bundt pan with cooking spray. Spread batter in prepared pan. Bake cake until a toothpick inserted into center of cake comes out clean, 60 to 70 minutes. Cool in pan 20 minutes. Invert onto a rack; cool completely, top side up. Drizzle with blueberry cream sauce. For drizzle combine 1 cup heavy cream with 1/2 cup Blueberry Lemon Topping. Blend well with whisk. Refrigerate to thicken.
 

Raspberry Lime Shrimp Cocktail Sauce

1 lime, quartered
½ cup of mayonnaise
1 tsp Pommery Firemans Mustard
1 cup of Summer Raspberry Lime Topping
2 TBS honey

Blend all ingredients together until well mixed.  Add more spicy mustard if you desire more spiciness, 1 tsp at a time.   Serve in glass dishes, surrounded by 4-6 deveined and cooked jumbo shrimp.  This recipe makes enough sauce for 2 pounds of shrimp. 

Two of our favorite recipes:

Summer Blackberry Topping Cream Cheese Dip
2 (8oz) blocks of cream cheese, softened
½ cup of Summer Blackberry Topping
2 tsp powdered sugar

Combine the ingredients in a large bowl and beat on medium for 2 minutes, or until well blended.  Serve with your favorite crackers or toasted breads for a delightful treat.    For special occasions, serve the dip in a bread bowl, using the balls of bread that you have removed as a dipping item.   

Summer Blackberry Salad Dressing

? Cup Blackberry Patch Summer Blackberry Topping
? cup olive oil
2 tablespoons white wine vinegar
1 tablespoon balsamic vinegar
salt and pepper to taste
Put in mason jar and shake with vigor

Apple Cinnamon Bread Pudding

1 jar of Cinnamon Apple Topping
½ cup of chopped pecans  
6 slices of day old bread, torn into bite size pieces
4 eggs, beaten
2 cups of milk
¾ cup of white sugar

In an 8" square pan, place the bite-sized pieces of bread.  In a medium bowl, combine the beaten eggs, milk and sugar.  Pour over the bread, pushing down to ensure that all pieces of bread are soaked.   In a second small bowl, stir the chopped pecans into the cinnamon apple topping and then stir the mix into the soaked bread pieces.  Bake at 350 degrees for 40 minutes, or until the top springs back when touched.
