Baby Greens with Balsamic Vinaigrette

Serves 2
Cook Time 10 minutes

1 garlic clove, halved
6 (1/2-inch-thick) slices French bread or baguette
2 teaspoons 274th Sicilian Extra Virgin Olive Oil
Trapani Sea Salt, to taste
8 cups gourmet salad greens
Vinaigrette:
2 tablespoons San Giacomo Balsamic Vinegar
1 tablespoon water
2 teaspoons Freeze Dried Shallots
4 tablespoons 274th Sicilian Extra Virgin Olive Oil
1/4 teaspoon ground black Tellicherry Pepper
1/2 teaspoon Sale di Cervia Sea Salt

Preheat oven to 400 degrees. Rub garlic on one side of each bread slice, drizzle with 274th Sicilian Olive Oil and Trapani Salt, than place on baking sheet. Bake for 4 minutes on each side or until golden. Combine the vinaigrette in a bottle or jar. Cover tightly and shake vigorously. Toss vinaigrette and greens. Servewith garlic croutons.
